In accordance with blueberries showing up in grocery stores and markets this time of year, the following recipe delightfully showcases them. They are very easy to make and are a great addition to any spring party. These bars don’t even require a mixer, making for an easy cleanup! Consider them a healthy dessert and go make them.

Blueberry Crumble Bars
Ingredients:
-1/4 cup sugar
-1/4 cup light brown sugar
-1/2 tsp. baking powder
-1 1/2 cups flour
-1/2 cup butter, cold and cubed
-2 tbsp beaten egg
-1/4 tsp. vanilla
Blueberry Filling:
-2 cups blueberries
-1/4 cup sugar
-1 1/2 tsp. cornstarch
Steps:
1. Preheat oven to 375ºF. Grease and line an 8×8” baking pan with parchment paper and set aside.
2. For the crust and crumble, combine sugar, brown sugar, baking powder, and flour.


3. Cut in butter and mix with your hands until mixture looks like coarse crumbs.


4. Add in egg and vanilla and mix just until all ingredients are incorporated. Divide the mixture in halves, then evenly pat down one half on the bottom of the prepared pan.

5. In a separate bowl, combine the blueberries, sugar, and cornstarch and stir gently.

6. Sprinkle blueberry mixture evenly over the crust.

7. Crumble remaining half of crust over the top of the blueberries.

8. Bake for 45 minutes or until lightly brown on top. Let cool completely before cutting.
