Chocolate Chip Cookies

Since this column’s inception in 2015, several variations of recipes with chocolate chips have been posted: chocolate chip scones, banana chocolate chip muffins, chocolate chip cookie bars, and chocolate chip cookie brownies. However, a simple chocolate chip cookie recipe is not yet in this repertoire, which changes today! Here is a painless cookie recipe that yields soft and chewy results. This is achieved by the chilling of the dough, which is necessary for texture. They are the perfect comfort snack anytime of the year, but especially in the winter!

Chocolate Chip Cookies

Ingredients:

-3/4 cup unsalted butter, at room temperature 

-3/4 cup packed dark brown sugar 

-1/4 cup granulated sugar 

-1 large egg, at room temperature 

-2 teaspoons pure vanilla extract 

-2 cups all-purpose flour 

-2 teaspoons cornstarch 

-1 teaspoon baking soda 

-1/2 teaspoon salt 

-1 and 1/4 cup semi-sweet chocolate chips

Steps:

1. In a stand mixer, cream butter for 1 minute.

2. Add the brown sugar and granulated sugar and mix on medium speed until fluffy and light in color.

3. Mix in egg and vanilla. Scrape down the sides and bottom of the bowl as needed.

4. In a separate bowl, combine flour, cornstarch, baking soda and salt. On low speed, slowly mix into the wet ingredients until combined.

5. Add the chocolate chips and mix for about 5 seconds until evenly distributed.

6. Cover dough tightly with aluminum foil or plastic wrap and chill for at least 1 hour and up to 2 days.

7. Preheat oven to 350°F. Remove cookie dough from the refrigerator and allow to sit at room temperature for 10 minutes. 

8. Using an ice cream scooper, place about 1.5 tablespoons of dough onto baking mats.

9. Bake for 10-11 minutes, until barely golden brown around the edges. Let cool completely.
